ChocoCoco Strawberry-Banana Brownie Bites

When Todd and I first decided to do an elimination diet to try to help alleviate his Rheumatoid Arthritis (RA), gluten was the first thing to go. We wanted so badly for gluten to be a sort of scapegoat for his flare-ups. At the suggestion of a co-worker, we had high hopes that eliminating it would really help. However, the lack of gluten didn't make a different from him at all. Regardless, I am eternally grateful for that trial period. That's what really got us to look into diet and how it can affect RA.  What followed the gluten trial was the elimination of meat and dairy, two of the biggest dietary triggers for RA. Google "Rheumatoid Arthritis and diet" and that's what you'll find. Avoid meat and dairy. So, that's what we did. And boy did it help. Then, I discovered nutritionfacts.org and I cannot tell you how instrumental that website was to our vegan journey and still is! I researched eggs, as essentially that was the only animal product we were consuming at that time. I had no idea how inflammatory they were and we eliminated them from our diet immediately. Being completely vegan relieved his worst RA symptoms incredibly. We were both so surprised at how substantially diet impacted him, with regards to the arthritis.

I became very interested in a vegan diet due to the benefits that myself and especially Todd experienced, that I began to research nutrition and food every free minute I had. That's when I really discovered the horrors that are inflicted upon animals, the environment, and surprisingly our own bodies with implementation of an omnivorous diet. I was shocked.

*Reader Discretion Advised - Strong Language and The Truth* What scares me the most is how our food animal friends come to be on our plates. I can't even really admit that I turned a blind eye to it all, I just simply didn't have all the facts. I suspect that's how most people go through their dietary life and that's very upsetting. The meat and dairy industries work tirelessly to hide their transgressions. Plus, don't you know how hipster bacon is you guys!? I'm not sure about you, but I (along with the rest of the world) yearn for fried, decaying pig carcass strips on EVERYTHING.

At least try to make the connection. Or, read this story on how dead piglets are ground up into a "smoothie" and fed to their mothers. If you still want bacon armed with that little piece of knowledge gold...that's f*cked up. That's a blind eye. Hey, sometimes even I have to get all serious and bitchy up in here.

People! That's really happening. That's not vegan propaganda. Pigs are held in such monstrously, horrible conditions because of our insane demand for bacon and pork, that this is now what has to be implemented to keep other pigs from getting sick. If that completely disgusts you gastronomically (and hopefully ethically), sign the petition at the bottom of this post. Great, now I ruined my day.

Anyways, I bet you're asking what in the hell my angry little story has to do with these brownie bites. Well, they are made with coconut flour. Which is gluten free. Yes, we're back to the very top of the post now. I can hear my dad now, "Get to the point, Katie." I tend to feel the need to explain everything. You see, the fact that gluten never bothered Todd, means that we have an abundance of different gluten free flours and coconut flour is just one of them. I absolutely refuse to waste them! So, I decided to set out on a coconut flour brownie adventure!

I'm not even going to try and hide it, when I pulled these bad boys out of the oven and saw that they were all sunken...I was mighty sad. Then I thought...wait a minute...I just made strawberry jam a few days ago and these have bananas in them. Omg, I'm going to fill those sunken bits with jam! And the rest is brownie history. These super gooey brownie bites are made with coconut flour and no oil! Filled with your favorite jam, they delight!

Salted Oatmeal Chocolate Chip & Cherry Cookies

Yesterday, after work, Todd spent a few hours visiting with his cousin that just came back into the big city. Todd also happens to have his lunch taken care of today. Do you know what this means? This means that I didn't have to make dinner yesterday! Which means, ultimately, that I was blessed with the freedom to make whateeeeeeever I wanted to stuff my face with for dinner. Oh yes.  Welcome to a glimpse of what my life would be like if I weren't married. It's cookies. Just cookies. Cookies. All. The. Time. Cookies for breakfast, for lunch, and for dinner, obviously. At least I went quasi-healthy with these cookies and packed them full of oats, cherries, and nuts.

This recipe is based off a recipe my mom used to make. I don't know what recipe it is or where she got it from, but she used to make them all the time. Everyone loved these cookies and I haven't had them in many, many years. So, knowing that her's weren't remotely vegan, I thought I would try to recreate them for myself, and for you!

Produce On Parade - Salted Oatmeal Chocolate Chip & Cherry Cookies

Chocolate chip oatmeal cookies, speckled with tart cherries and nuts. They're sprinkled with a little flake salt for good measure. Crisp on the outside and chewy on the inside, these are delectable!

Salted Oatmeal Chocolate Chip & Cherry Cookies

Makes 20 cookies

Notes: I like unrefined coconut oil for that coconutty taste, but refined will work too. If you don't have dried cherries, cranberries will work as well. Feel free to use your favorite nuts or omit completely! The dough will be a bit crumbly, but if it seems too dry add milk or water 1 Tbsp. at a time.

  • Flax Egg:
  • 1 Tbsp. ground flax seed
  • 3 Tbsp. water
  • Wet:
  • 1/2 cup + 2 Tbsp. unrefined coconut oil, solid
  • 2/3 cup dark brown sugar, packed
  • 1 tsp. vanilla extract
  • Dry:
  • 3/4 cup whole wheat white flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. kosher salt
  • Add-Ins:
  • 1 1/2 cups old-fashioned rolled oats, dry
  • 1/2 cup vegan chocolate chips
  • 1/2 cup dried tart cherries, chopped
  • 1/4 cup walnuts, chopped
  • 1/4 cup pecans, chopped
  • Topping:
  • flake salt (or kosher salt)

In a small bowl, mix together the ground flax seed and the water. Place in the fridge to cool until ready to use.

In a large mixing bowl, beat the wet ingredients together until smooth and all the solid oil clumps are gone. Now, add the flax egg and beat again until combined.

Produce On Parade - Salted Oatmeal Chocolate Chip & Cherry Cookies Slowly incorporate the add-ins to the dough, until just combined.

Produce On Parade - Salted Oatmeal Chocolate Chip & Cherry Cookies Cover the dough and chill in the fridge for 30 minutes.

Preheat the oven to 350 F and coat a baking sheet with a nonstick cooking spray.

Form about 1 1/2 Tbsp. dough balls with your hands and flatten just a bit. The dough won't spread out much at all in the oven, so how they are shaped is pretty much how they'll look when they're done. Sprinkle with flake salt and continue with the remaining dough.

Produce On Parade - Salted Oatmeal Chocolate Chip & Cherry Cookies (No, that baking sheet IS NOT a prop. I won't apologize for the shameful state of it. I know I'm a monster and I'm okay with it.)

Bake at 350 F for 13 minutes or until the edges of the cookies turn golden brown. Remove from oven and allow to rest on the baking sheet for a few minutes to firm up before transferring to a wire cooling rack.

PSA: You don't need eggs in cookies. Surprise! Stop using eggs in cookies. Use flax seed instead. That is all.

German Word of The Day: Cookies --> Gebäck (pronounced: geh-beck). I also found Keks for cookie and Kekse for cookies. I think Gebäck might refer more towards pastries and Kekse more towards biscuity type of cookies. Can any German speakers shed light on Gebäck versus Kekse? I know I have a few German speaking readers!

Birdseed Cookie Dough Larabars

Happy Valentine's Day! If you think that you don't have a special someone in your life, I'm sorry to inform you that you're wrong. You have yourself. *smile* If you're a single gal (or guy) this Valentine's Day, take it upon yourself to...

Watch a bunch of Parks and Rec episodes (especially if you haven't seen it...so funny). Enjoy your favorite movie, eat your favorite food, cuddle with your favorite non-human friend, buy yourself a little treat...or just maybe make yourself some of these delicious homemade Larabars? Pretty soon V-Day will be your favorite holiday too.

Anywho, onto these bars. Remember the Birdseed Cookies I made a few weeks back? Well, I made cookie dough "Larabars"...but Birdseedized! What's more awesome than that?

Produce On Parade - Birdseed Cookie Dough Larabars

I don't know why I seem to suddenly have an aversion to making actual, proper dinners. Poor Todd. Or maybe not? Excitedly, I had him taste these bars thinking he might not like them (I thought perhaps there was too much nutmeg) and his face lit up with, to my shock, sheer joy. "These are really good!" I was thrilled!

These homemade date and cashew cookie dough larabars are studded with millet, sesame and sunflower seeds. Sweet, crunchy, chewy and sure to give you a boost of energy!

Birdseed Cookie Dough Larabars

Makes 8 bars

  • 1 cup raw cashews
  • 1/4 cup sunflower seeds
  • 13 dates (about 1 cup tightly packed), pitted
  • 1/2 -1 Tbsp. water
  • 1 tsp. agave nectar
  • 1 tsp. vanilla extract
  • 1/2 tsp. kosher salt
  • small grating of fresh nutmeg
  • scant 1/4 cup vegan chocolate chips
  • 2 Tbsp. millet, dry
  • 2 Tbsp sesame seeds

In a food processor, pulse the cashews and sunflower seeds until they are large granules (medium chopped).

Produce On Parade - Birdseed Cookie Dough Larabars Produce On Parade - Birdseed Cookie Dough LarabarsAdd in all the remaining ingredients except for the chocolate chips, millet and sesame seeds. Pulse until well combined.

Transfer to a medium bowl and stir in the last three ingredients.

Press firmly into a 9x9 inch baking dish and freeze for about 15 minutes.

Produce On Parade - Birdseed Cookie Dough LarabarsSlice into eight bars. Wrap in plastic wrap if you like and store in freezer. The bars tend to break apart if not frozen.
