Salted Caramel Chocolate Tart - Birthday Fun

So...it's been a little while. Sorry 'bout that. I was on the East Coast for two weeks! My sister-in-law ran the Boston Marathon and Todd and I went down to surprise her! If you don't follow me on Facebook, Twitter, and/or Instagram you may have been wondering what I could be possibly doing that would warrant abandoning you for two weeks. While I may not have managed to whip out a full-blown blog post, I did do a lot of posting to social media. If you don't follow Produce On Parade on social media already, you definitely should! I think of myself as highly entertaining...maybe.

Anyways, we left on my birthday! Also, the 25th was Todd and my veganniversary and Produce On Parade's one year blogiversary! That's a lot to celebrate and I can't think of a more amazing way, gastronomically speaking, than with this Salted Caramel Chocolate Tart! I've missed you all so much and I'm so excited to be back.

Produce On Parade - Salted Caramel Chocolate TartHere's my gift to you, a creamy coconut caramel poured into a rich, chocolate crust all topped with a luxurious dark chocolate ganache and sprinkled with flake salt. A decadent dessert sure to impress anyone, vegan or not!

Makes 1 9" Tart

  • Crust:
  • 2 Tbsp. ground flax seed
  • 2 Tbsp. water
  • 10 Tbsp. vegan butter, chopped
  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 tsp. vanilla extract
  • 1/4 heaping cup unsweetened cocoa powder
  • 1/4 tsp. kosher salt
  • Caramel:
  • 1 1/2 cups vegan sugar
  • 3 Tbsp. light corn syrup
  • 5 Tbsp. water
  • 1/4 tsp. kosher salt
  • 1/4 tsp. coconut extract
  • 1/4 tsp. rum extract
  • 6 Tbsp. vegan butter, chopped
  • 1/2 cup canned full-fat coconut milk (give the can a good shake first)
  • Ganache:
  • 3/4 cup canned full-fat coconut milk
  • 8 oz. semi-sweet vegan baking chocolate, chopped
  • flake salt (to garnish)

Crust:

In a food processor, using the dough hook attachment, combine all the dough ingredients. Process, pulsing and scraping down the sides occasionally until well combined and collects on one side of the bowl.

Press evenly into a 9" tart pan, ensuring to bring the dough all the way to the top edge of the pan. Poke with a fork several times and place in the refrigerator to cool for one hour.

Meanwhile, place all the caramel ingredients except for the butter and coconut milk in a small bowl. No need to combine. Set aside until ready to use.

When the tart has 10 minutes left for chilling, preheat the oven to 350 F. Remove from fridge and place pie weights or a sheet of aluminum covered with a thick layer of dried beans on top of the crust to keep it from ballooning while baking. Bake at 350 F for 20 minutes, then remove the weights and bake for an additional 8-10 minutes. Remove from oven, and chill until ready to use. 

Caramel: 

Now, in a heavy bottomed soup pot add the bowl of caramel ingredients and bring to heat over medium. Continuously stir until combined, then allow to cook until it's reached 350 F and do not stir. It should boil, without stirring, until it's reached a dark amber color.

Remove from heat, and stir in the coconut milk and butter until smooth.

Pour into the chilled tart crust and place in the fridge.

Ganache: 

In a pyrex measuring cup or microwave safe bowl, heat the coconut milk for 1-2 minutes until very hot. Add the chopped chocolate and whisk until smooth.

Produce On Parade - Salted Caramel Chocolate TartPour the ganache over the caramel (careful it doesn't overflow!) and place on a level surface in the fridge to chill, at least 1-3 hours depending on if it was pre-chilled or not.

Remove once chilled and finish with a sprinkling of flake salt. Slice and serve chilled. Store in the fridge as the tart will become oozy if let out of the fridge for too long, but will stay very firm if chilled.

Freeze any leftovers for extended consumption and just place in the fridge to thaw before consuming.

Salted Oatmeal Chocolate Chip & Cherry Cookies

Yesterday, after work, Todd spent a few hours visiting with his cousin that just came back into the big city. Todd also happens to have his lunch taken care of today. Do you know what this means? This means that I didn't have to make dinner yesterday! Which means, ultimately, that I was blessed with the freedom to make whateeeeeeever I wanted to stuff my face with for dinner. Oh yes.  Welcome to a glimpse of what my life would be like if I weren't married. It's cookies. Just cookies. Cookies. All. The. Time. Cookies for breakfast, for lunch, and for dinner, obviously. At least I went quasi-healthy with these cookies and packed them full of oats, cherries, and nuts.

This recipe is based off a recipe my mom used to make. I don't know what recipe it is or where she got it from, but she used to make them all the time. Everyone loved these cookies and I haven't had them in many, many years. So, knowing that her's weren't remotely vegan, I thought I would try to recreate them for myself, and for you!

Produce On Parade - Salted Oatmeal Chocolate Chip & Cherry Cookies

Chocolate chip oatmeal cookies, speckled with tart cherries and nuts. They're sprinkled with a little flake salt for good measure. Crisp on the outside and chewy on the inside, these are delectable!

Salted Oatmeal Chocolate Chip & Cherry Cookies 

Makes 20 cookies

Notes: I like unrefined coconut oil for that coconutty taste, but refined will work too. If you don't have dried cherries, cranberries will work as well. Feel free to use your favorite nuts or omit completely! The dough will be a bit crumbly, but if it seems too dry add milk or water 1 Tbsp. at a time. 

  • Flax Egg:
  • 1 Tbsp. ground flax seed
  • 3 Tbsp. water
  • Wet:
  • 1/2 cup + 2 Tbsp. unrefined coconut oil, solid
  • 2/3 cup dark brown sugar, packed
  • 1 tsp. vanilla extract
  • Dry:
  • 3/4 cup whole wheat white flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. kosher salt
  • Add-Ins:
  • 1 1/2 cups old-fashioned rolled oats, dry
  • 1/2 cup vegan chocolate chips
  • 1/2 cup dried tart cherries, chopped
  • 1/4 cup walnuts, chopped
  • 1/4 cup pecans, chopped
  • Topping:
  • flake salt (or kosher salt)

In a small bowl, mix together the ground flax seed and the water. Place in the fridge to cool until ready to use. 

In a large mixing bowl, beat the wet ingredients together until smooth and all the solid oil clumps are gone. Now, add the flax egg and beat again until combined.

Add the dry ingredients slowly to the wet ingredients and beat until almost combined. 

Produce On Parade - Salted Oatmeal Chocolate Chip & Cherry Cookies Slowly incorporate the add-ins to the dough, until just combined. 

Produce On Parade - Salted Oatmeal Chocolate Chip & Cherry Cookies Cover the dough and chill in the fridge for 30 minutes. 

Preheat the oven to 350 F and coat a baking sheet with a nonstick cooking spray. 

Form about 1 1/2 Tbsp. dough balls with your hands and flatten just a bit. The dough won't spread out much at all in the oven, so how they are shaped is pretty much how they'll look when they're done. Sprinkle with flake salt and continue with the remaining dough.

Bake at 350 F for 13 minutes or until the edges of the cookies turn golden brown. Remove from oven and allow to rest on the baking sheet for a few minutes to firm up before transferring to a wire cooling rack.

PSA: You don't need eggs in cookies. Surprise! Stop using eggs in cookies. Use flax seed instead. That is all.

German Word of The Day: Cookies --> Gebäck (pronounced: geh-beck). I also found Keks for cookie and Kekse for cookies. I think Gebäck might refer more towards pastries and Kekse more towards biscuity type of cookies. Can any German speakers shed light on Gebäck versus Kekse? I know I have a few German speaking readers!

This made me wrinkle my nose in disgust. A contest for killing? I know I shouldn't be surprised but somehow I am. Just disgraceful.

Salted Caramel Chocolate Cashews

Is it wrong to make chocolate treats for dinner instead of...actual dinner? I should think not. My biggest issue with this is not that I eat my weight in chocolate (surprisingly) or deprive myself of nutrients not found in chocolate alone. No, it's that I won't have a lunch for work the following day. For example, today's lunch is corn tortillas and a can of black beans...and I didn't even bring a can opener. Who does that?! Produce On Parade - Salted Caramel Chocolate Cashews It's all in the name of chocolate. And speaking of chocolate...Valentine's Day might be my favorite holiday. You thought I forgot, huh? Alas, I'm not even remotely romantic. I grew up with two brothers, the vast majority of my friends are of the male variety, and I'm more tomboy than prettygirl. But if there's two things I love, it's flowers and unexpectedly receiving chocolate goodies. Arguably the things to recieve on this blessed, blessed holiday. 

I don't care if it's over-commercialized. Seriously, what isn't? No really, I really want to know. A day of celebrating love (let's not forget flowers and chocolate) is a pretty radical day in my book. I'm down for that. Plus, my favorite color might be pink. It's a win, win, win, win!

Produce On Parade - Salted Caramel Chocolate Cashews This recipe is a win, too. These little guys are absolutely delectable. I got the idea from a friend who told me her husband buys her a huge bin of those salted chocolate cashew clusters from Costco on Valentine's Day. That's pretty awesome. I decided to add a little date of nature's chewy caramel to them because, let's be real, caramel deserves to include itself in anything and everything. Also, nothing is as good as it could be if it's not salted. It's a fact. Seriously

These are scrumptious little cashews, wrapped in chewy caramel dates and dipped in smooth chocolate, all finished with a sprinkle of flake salt. 

Salted Caramel Chocolate Cashews 

Makes about 50 balls (about 1 1/2 cups)

  • 3 oz. semi-sweet chocolate
  • 2 Tbsp. non-dairy creamer or milk (I used hazelnut Silk creamer)
  • 8 medjool dates, pitted
  • 1/2 cup raw whole cashews (about 50 nuts)
  • flake salt for topping

In a small pot, bring about 1 inch of water to a boil over high heat. Reduce to low and place a small, heat-safe bowl over the pot of water. Add the chocolate and the creamer to the bowl to melt. Stirring occasionally, melt the chocolate then remove from heat but keep the bowl over the pot. 

Produce On Parade - Salted Caramel Chocolate Cashews Meanwhile, pit the dates. Cut in half and then cut each half into thirds. There should be six pieces to each date. 

Produce On Parade - Salted Caramel Chocolate Cashews Take one cashew and wrap one piece of the date around it, like they're hugging, to make a ball. Continue with the remaining date pieces. 

Produce On Parade - Salted Caramel Chocolate Cashews Produce On Parade - Salted Caramel Chocolate Cashews Prepare a baking sheet covered with parchment paper. Dip the cashew/date ball in the chocolate to coat and place on the parchment paper.
