Thai Purple Pasta

Ever since I stumbled upon black bean noodles, I've been absolutely dying to try them. It's like my life wish, these noodles. Is this normal? Anyways, I finally found some at a health food store in Anchorage along with Beyond Meat (OMG!). I knew exactly what I wanted to make with the both of them. 

When I opened up the noodle package, examining it, I realized they were not in fact my irrationally sought after black bean noodles but instead black rice noodles....whoops. I'm almost ashamed to admit how devastated I was, but alas they turned out to be fantastic.

On purpose, I normally don't buy gluten-free things, so I was surprised to discover that they had a wonderful texture. If you have celiac disease, are gluten-sensitive, or just avoiding the stuff for some reason you give these noodles a try. I think you'll enjoy them.

I joined Full Circle a couple weeks ago and received my first box this week. In it was absolutely the most adorable tiny purple pepper, which you'll see in my next post. There was a lot of gorgeous stone fruit, some sturdy kale, and silky chard too (that guy's in the next post as well!) I ordered two bunches of beets because I must have them in excess and a little head of purple cabbage. 

Half of that little purple cabbage, you'll see found it's way into our purple pasta today. Good thing the noodles were already purple I guess! Feel free to use soba noodles in this recipe, I think they'd work beautifully. Black rice noodles probably aren't lingering around your local grocery store, so don't feel bad.

My cilantro has been showing off these sweet and delicate little white flowers now that the autumn leaves are falling and the mornings are windy and chilly. I'll be sad without my little herb garden in the coming month.

Thai Purple Pasta
A beautiful purple pasta with sauteed purple cabbage and plant-based meat, laden in a sweet, Thai sauce.
Ingredients
  • 1 Tbsp. olive oil
  • 2 garlic cloves, minced
  • ½ small purple cabbage head, chopped
  • 12 oz. plant-based meat strips (I used grilled “chicken” strips), thawed and halved
  • 9 oz. black rice noodles (soba work too!), dry
  • 1/4 cup fresh cilantro, chopped (optional)
  • -- Sauce --
  • 2/3 cup water
  • ¼ cup + 2 Tbsp. soy sauce
  • 1 1/2 Tbsp. vegan sugar
  • 1/2Tbsp. sweet chili sauce
  • dash of crushed red pepper
  • dash of sesame seeds
Instructions
Bring a large pot of water to boil for the noodles. Once boiling, parboil the noodles according to package but deduct a few minutes. You want the noodles to be a super al dente. Mine only needed three minutes, so place them in the water when prompted below. In a large rimmed frying pan, heat the oil over medium low. Add the garlic and sauté for a few minutes, until fragrant. Add the cabbage and meat strips. Increase the heat to medium and cook for about 8 minutes, until the cabbage becomes wilted and tender and the strips are heated thoroughly.Meanwhile whisk together the sauce ingredients, ensuring that the sugar has mostly dissolved. Place the noodles in the boiling water to cook. Drain when super al dente and add to the frying pan. Next, add in the sauce and stir well to coat. Turn the heat to medium-low for a few minutes, until the noodles have soaked up most of the sauce. Remove from heat and stir in cilantro. Serve hot and topped with sesame seeds and additional cilantro.

Sweet Potato & Orange Herbed Soup with Spicy Sausage

On this edition of "Get Rid of All The Food Before Our Trip!", sweet potato and orange are the stars with supporting roles from fresh cilantro and parsley, as well as spicy chipotle sausage. It's a good one, and just look how pretty this soup is! 

I had a few potatoes I knew were aging a bit and a several oranges leftover from giant bag of clementines that we'd bought from Costco a couple weeks ago. When I delved into my trusty Flavor Bible, I found that they pair beautifully together! I was pretty psyched. Two plants with one stone, if you know what I mean. Though, I've never been much a fan of citrus, specifically orange, in my soup...this was darn delicious.  

It's funny, when the herbs are blended in, the soup becomes a bit frothy which I found to be delightfully amusing for unknown reasons. It did dissipate after a short while though. 

I decided to make a sweet potato soup after learning that boiling the sweet taters is actually by far the best method of cooking for retaining their nutritional prowess. Now usually I try to stay away from boiling vegetables because I had always thought the opposite was true. Apparently with sweet potatoes, boiling is actually best. Roasting, in fact, wrecked havoc on them in regards to retaining their nutrition. Boo that!

A creamy, sweet potato soup enlivened with fresh-squeezed orange juice that's complemented by green cilantro and parsley, and studded with browned Mexican chipotle sausage.

Sweet Potato & Orange Herbed Soup with Spicy Sausage
A creamy, sweet potato soup enlivened with fresh-squeezed orange juice that's complemented by green cilantro and parsley, and studded with browned Mexican chipotle sausage.
Ingredients
  • 2 large sweet potatoes, sliced
  • dash of kosher salt
  • 1 Tbsp. olive oil
  • 1 large yellow onion, diced
  • 2 garlic cloves, sliced
  • 3 small oranges, juiced
  • 3 cups vegetable broth
  • 1/4 tsp. ground allspice
  • dash of ground black pepper
  • 2 Mexican Chipotle Field Roast Sausages, chopped
  • handful of fresh parsley, chopped
  • handful of fresh cilantro, chopped
Instructions
Add the sliced sweet potato to a large pot. Pour in just enough water to cover the slices, add a dash of salt, and bring to a boil over high heat. Then, cover and boil for about 25 minutes.Meanwhile, in a large rimmed frying pan heat the olive oil over medium. Add the onion and garlic and saute for about 10 minutes, until the onions have browned.Juice the oranges and add the juice to a blender along with the broth, allspice, and pepper. Transfer the onions to the blender when they are done browning. Add the chopped sausage to the frying pan and brown for about 5 minutes. Once the sweet potatoes are done boiling, remove with a slotted spoon and place in the blender. Blend all the ingredients in the blender on high for several minutes until smooth and creamy, excluding the sausages and herbs.Now, add the herbs and blend until well incorporated. Heat in a high speed blender, or in a large soup pot until just heated through. You don't want to cook the fresh herbs. Serve hot and topped with 1-2 Tbsp. of the browned, chopped sausage and additional fresh herbs.

Wrong. Big time wrong. These sheep aren't pets, don't be fooled into thinking that just because they aren't slaughtered (which they usually are later) means they are treated as nicely as you'd treat your animal companion. They are nothing more than a commodity in the eyes of the wool business and if you think anything other than that...it's time to open your eyes and bring an end to blatant ignorance and apathy. Help ask J.Crew and Ralph Lauren to use cruelty-free materials in place of wool! 

Avocado-Cilantro Cream Angel Hair

This is such a delightful spring dish. It also happens to be counting as my "green" today. If you follow me on Facebook, Twitter, or Instagram you know that my morning was pretttty shitttty. Needless to say, I completely forgot it was St. Patrick's Day and ran out of the house thankful to be on time for work (breastases aren't going to be mammogramin' themselves you know), let alone wearing green. Lucky for me (I'm part Irish), not a single person pinched me today. Whew! 

Produce On Parade - Avocado-Cilantro Cream Angel Hair

If you happen to be one of those poor souls who hates cilantro (I hear it's genetic...no, seriously) stay far, far away from this dish. Same goes if you strongly dislike avocados. However, I have yet to meet such a person and will totally notify you if I ever do. Who hates avocados?

This is one luxurious dish. Angel hair pasta bathes in a light and dreamy avocado-cilantro cream sauce. It's a bit sweet, with a hint of ginger and zesty lime. Barring any anger towards cilantro or avocado...you're going to love it. You'll also love that it's done in the time it takes to boil up some pasta! And that's something we can all be thankful for. 

Side Note: It's weird to me now that I used to make pasta sauces sans veggies. Like non-vegan, traditional mac & cheese and alfredo sauce. My vegan mac & cheese is made with sweet potato and my alfredo sauce with cashews and cauliflower. Then there's this delicious cream sauce with cilantro and avocado. Ponderous. How sad and boring (not to mention lacking some superfly nutrients) it must be for people to make traditional pasta sauces. They don't know what they're missing...and that makes my heart all glum

Avocado-Cilantro Cream Angel Hair

Serves 6

Notes: The pasta should be done at the same time, or just after the sauce. You don't want it to sit cooked. 

  • 16 oz. angel hair pasta, dry
  • 1 tsp. olive oil
  • 6 large garlic cloves, sliced
  • 2 large ripe avocados, pitted
  • 1 large bunch of cilantro (stems and all)
  • 3 limes, juiced
  • 1 small knob of fresh ginger, peeled and rough chopped
  • 1/2 cup plain non-dairy milk
  • 1 Tbsp. olive oil
  • 1 Tbsp. agave nectar or maple syrup
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. crushed red pepper flakes

Bring a large pot of salted water to boil for the pasta. When boiling, cook according to package which is usually about five minutes. Drain and return to pot. 

Produce On Parade - Avocado-Cilantro Cream Angel HairMeanwhile, heat the 1 tsp. of olive oil in a small saute pan. Add the garlic and saute for a few minutes, until browned and fragrant. Remove from heat. 

In a food processor, add the remaining ingredients including the sauteed garlic. Process until smooth and creamy.

Add the sauce to the cooked and drained pasta, stir well to coat.
